Very good.
Sushi review only; several lunch visits. Fuji is very good but not top tier. The rice's texture is good but the seasoning a little strong (which I happen to like for some toppings). The fish has been very good to excellent, but without the fine tuning that the best places have. Staff is friendly and attentive. Worth a visit to try, but neaby Yoshi's is better.

Improving.
Fugi Sushi is relatively new and started with a rather basic menu. After having achieved some success they have expanded both their menu and their floor space. The sushi is good, but with a lot of competition in the growing sushi market of St.Louis it rates in the middle of the pack. If you live in Chesterfield and don't feel like driving east, but crave sushi then you likely won't be disappointed. I suspect that with time this place will continue to improve and begin to contend with some of the more established sushi bars.

Great sushi.
Fuji Sushi is my favorite sushi restaurant in the St. Louis area. The fish is always fresh, the rolls are always bountiful (for example, they use at least two asparagus spears in each asparagus maki as opposed to one at other restaurants). Their tempura shrimp roll (ebi maki) is one of the tastiest around with their use of teriyaki sauce. Prices for their rolls are less than what I have paid for at other area restaurants. Also, the atmosphere is relaxed (many booths) and the service is usually prompt (unless they get really busy). My husband and I go there at least once a week. We also enjoy their diverse menu selections. I've told most I know about this restaurant and have taken many friends here, all whom enjoy it as I do. I can't say enough about the positive reasons to go to Fuji Sushi!
